OutdoorFit Energy Cookies

These cookies are spiritual cookies. The recipe is from Brother Juniper’s Bread book by Br. Peter Reinhart. I love to have extra meaning to eating cookies. These cookies have a surprise in every bite and are fairly healthy. Perfect after a cold Outdoorfit workout with a cup of tea.

Merry Christmas

1/2 cup Pumpkin seeds
1/2 cup sunflower seeds
1/2 chopped nuts
2 tablespoon flax seeds
4 cups unbleached all-purpose flour
(gluten free,I used coconut flour and Bob’s Red Mill all-purpose flour)
1 cup chocolate chips
2 cups rolled oats
1 tsp salt
1 tsp baking powder
1 cup canola oil
1 cup honey
1 cup raisins plumped in one cup water
350 degrees 14 minutes
This is a fun cookie recipe. I did make a batch of gluten-free and they came out a bit gritty but not too bad. I also like to add shredded carrots or zucchini so they are a cookie with fruits and veges..
Mixing
First plump your raisins in one cup hot water.
Combine the seeds and nuts and roast or toast them in a dry frying pan until they crackle.Remove from heat immediately and place them in a large bowl. add the rest of the dry ingredients. Add the raisins with the water,honey and oil. Mix together with a spoon.
Add Chocolate chips.
Baking
Scoop mixture with a small ice cream scoop or a spoon. Place on cookie sheet with parchment paper. You can press them down with a fork or the palm of your hand if you want.
Bake 350 14 minutes
Remove from oven and let cool for 15 minutes
